Friends for dinner, pasta on the menu and I need a nice Italian dessert. Who do I go to? My Queen of Quick & Easy (and very tasty!), who else but Nigella. Thumbing through Nigellisima, I come across this recipe and decide it fits the bill.
I retrieve four martini glasses from the cupboard and set to work…..
Tiramisini
4 Savoiardi Biscuits (sponge fingers)
100ml Espresso Coffee
2 tbspn Tia Maria or Kahlua
2 large Egg Whites
250gm Marscapone
2 tbspn Honey
2 tbspn Marsala
1 tspn Dutch Cocoa Powder
Make the espresso and add the coffee liqueur and set aside in the fridge to cool. Break each Savoiardi into four pieces and put in the bottom of the martini glasses. Pour the espresso mixture evenly between the martini glasses over the Savoiardi biscuits and tamp them down gently so they are soaked with the liquid.
Beat the egg whites to form soft peaks and then, in another bowl, beat the marscapone and the honey together until smooth and then gently beat in the Marsala. Gently fold the egg whites, a third at a time, into the marscapone mixture until combined.
Dollop this decoratively on top of the soaked biscuits and refrigerate for up to 24 hours although three to four hours will suffice.
When ready to serve, sprinkle the cocoa powder over the top of each through a sieve.
