Chicken drumsticks are such a cost effective way to feed a lot of people and are always popular. This recipe is great either hot or cold and so is perfect for a gathering at home or as a make ahead for a picnic. Serve with a range of salads and you’re good to go.

Italian Chicken Drumsticks
10-12 Chicken Drumsticks
2 tbspn EVOO
2 tbspn Balsamic Vinegar
2 tbspn Lemon Juice
2 tbspn chopped, fresh Basil
2 tspn dried Oregano
1-2 large Garlic Cloves, crushed
Put all the above into a zip lock plastic bag and squish everything together so the drumsticks are well coated with the marinade and then put into the refrigerator for an hour to let those flavours work their magic.
Preheat the oven to 200 deg C and then pour the contents of the zip lock bag into a roasting pan and cook for an hour.
Remove the drumsticks and serve hot or allow to cool as required. If serving hot, the pan juices can also be reduced with some white wine to make a tasty sauce to serve alongside.
